snow day

After reading Leila's blogpost about thinking ahead and cooking more than you need right now, I decided to buy a few butternut squash. Today's snowstorm kept me at home, so I put them in the oven and left them there while I worked on other things. Roasted in that leisurely way, they came out so soft and creamy - I had quite forgotten how good!  We lunched on some, we'll have a couple for Friday and the rest are in the freezer.

  1. I first had butternut squash down south. split in half, buttered up, and with a spoonful of brown sugar in the center. Man, they were so good. We love them, here, and they are a fantastic thing to have on hand.

    1. I tend to be in a hurry when I cook them, and steam them on the stove, which takes much less time and is good, but different from this method entirely!

  7. I've never had it, either - I've never done much with any kind of squash - but I roasted, sweet, some cantaloupes once, and that was an interesting experience...

  8. I love baked squash. Has anyone ever found an easy way to cut it?!

    1. You mean cutting it raw, I presume. I have a semi-sharp knife, and I cut off the top end, then cut it in half (ish) crosswise, then each half cut lengthwise. It's too hard for me to cut the whole thing lengthwise. As for acorn squash, I'm afraid I avoid it because it's too hard to handle. I wonder if it could be put in the oven whole, till it softened a bit?
